The substats you want depend on the playstyle you want to play. On PG you'd generally want long layup, intercept range, intercept success, dive success, dive range, move speed, drive speed, etc. For SP5 on SG, you have multiple options.
If you want to be a chucker, 3pt success is probably the best skill to have. Other decent substats may be long range or backroll speed.
If you want to play dash, running speed is a key skill. V-cut speed is also useful to help the dasher run their routes.
For iso, long layup range, drive speed and manual layup would be useful. Some mid shot success wouldn't be too bad either.
For swing, floater success would be the jackpot. Other viable substats would be double clutch success, manual layup, long layup range.
Now you could want to play drive-in swing or flly-oop swing. Drive-in would work well with drive speed and move speed. Flly-oop would work with jump pass range and the alley oop substat (if there is one).
If you wanna swing with SP5, you NEED one long layup range minimum. Floater success, double clutch success, manual layup range are nice to have but they definitely aren't as important as 3pt success/3pt att/run speed/move speed/drive speed.
For PG the best sub attributes to have are run speed/move speed. Then comes block/steal/steal motion/int range/dive range/etc.
