I think defender is like the midfielder but inclined more in defense since the midfielder is a generalist type with a fair chance of scoring while the defender lacks precision but can tackle more successfully than other position

The description of agility is something like "quickness to respond to new situations", so maybe it refers to how quickly your player will react to loose balls and rebounds e.g. when 2 players run and both try to pass. I'm not sure if that's the case, but it makes the most sense going by the description.

Yeah your character gets a little lag in new situations, like when the possession of the ball changes. Example: when you standing tackle someone and take away the ball, your movement slows down. Agility helps reduce that lag time. You will notice it if you switch between characters with high/low Agility
