How populated are the servers?

I played FSF recently and i play on the NA server since the EU server has 300ms which makes it almost unplayable.
I tried searching for a match on NA since EU was too laggy and i waited 10 minutes but couldn't find one?

And why is it that on FSSB 2 i don't lag at all even though i have a 180 ping difference in the NA server but in FSF i get a lot of lag?
